As long as you have oil, onion, rice and water everything else is flexible.<\/p>\n<p>Per person:<\/p>\n<ul>\n<li>1 very small onion chopped (or half a bigger one)<\/li>\n<li>chopped or crushed garlic (optional!)<\/li>\n<li>1 bay leaf (optional but recommended)<\/li>\n<li>Chopped herbs (optional but recommended &#8211; you could use dried)<\/li>\n<li>75g long grain rice ( &#8220;easy cook&#8221; rice is good as it won&#8217;t go sticky)<\/li>\n<li>190 mls hot water ( = 2.5 times volume of rice)<\/li>\n<li>half a stock cube<\/li>\n<li>1 tablespoon oil<\/li>\n<li>salt &amp; pepper ( stock cube may be quite salty so you might not need much salt you can always add more when it&#8217;s on the plate)<\/li>\n<\/ul>\n<p>any or all of the following, quantity depends on how hungry you are:-<\/p>\n<ul>\n<li>cooked meat, &#8211; bacon, chicken, sausage<\/li>\n<li>celery &#8211; chopped small<\/li>\n<li>carrot &#8211; chopped small<\/li>\n<li>peas<\/li>\n<li>sweetcorn<\/li>\n<li>peppers &#8211; chopped small<\/li>\n<li>chopped tomato<\/li>\n<li>sliced mushrooms<\/li>\n<li>anything else you&#8217;ve got that you think will taste good<\/li>\n<\/ul>\n<p>Dissolve stock cube in hot water.<\/p>\n<p>Heat oil in saucepan and cook onion and any raw vegetables until onion is softened. Add garlic, bay leaf and rice a cook for a minute or so. Pour in stock and bring back to boil. Add everything else and simmer gently until rice is cooked and all the liquid is absorbed. Watch it doesn&#8217;t stick to the bottom of the pan near the end of cooking time.
